Koshari, considered the national dish of Egypt, has a history as rich as its layers of flavor.

Born on the streets of Cairo in the late 19th century, it is an example of fusion cuisine: it combines rice and lentils from local tradition with pasta inspired by Italian cuisine and a spicy tomato sauce with British and Indian touches.

Originally sold by street vendors and in workers' canteens, Koshari became a symbol of culinary unity after the 1952 revolution, when it was promoted as popular and egalitarian food.

Today it is served in specialized restaurants that only offer variants of the same dish, and its consumption remains a daily, economical, and deeply identity-affirming act for millions of Egyptians.

Its vegan character is not a modern adaptation: it has always been eaten this way, out of necessity and conviction.
