The Mandoline: The Double-Edged Sword

It's the most dangerous tool in the kitchen... and the best. It allows you to make potato slices for tortilla in 1 minute, all identical (even cooking). Or vegetable carpaccios. The key is not strength, it's rhythm.

The Lifesaver (Literally)

Always use the plastic guard. ALWAYS. If the piece is very small and the guard slips, throw it away or cut it with a knife. Don't play Russian roulette with your fingertips. Another option: cut-resistant mesh glove (€10 that are worth gold).

Microplane: The Magic of 'Zest'

It's not a normal grater. Its blades are laser etched and *cut* instead of tearing. For citrus (only the orange part, without the bitter white), parmesan cheese (cheese cloud) or garlic (instant paste). It will change your finishes.

Box Grater (The 4-sided)

The all-rounder. Use it for:
  • Coarse side: Semi-cured cheese, tomato for toast.
  • Medium side: Carrot for salad.
  • Star side: Nutmeg or hard parmesan.
  • Slicing side: Forget it, use the mandoline.

Maintenance: Happy Blades

Wash the mandoline and graters *immediately* after using them under the tap. If food dries, the sponge will snag and dull the blades (or you will cut yourself). Pat dry, never rubbing against the grain.
