About this recipe

Gyozas, although of Chinese origin (jiaozi), have become a pillar of Japanese 'yōshoku'.

Unlike the fried street versions, this recipe recovers the pure steaming technique, traditional in dim sum, to offer a silky texture and a vibrant filling where the umami of shiitake mushrooms replaces meat without losing depth.

Instructions

Chop the mushrooms, pak choi, and spring onion into very fine 'brunoise' (2-3mm cubes). The finer it is, the better texture the filling will have and the easier it will be to close the gyoza.

You will need:

In a frying pan with the sesame oil, sauté the grated ginger and minced garlic for 30 seconds. Add the vegetables and cook over high heat for 3 minutes just to lose water and volume.

Off the heat, add the soy sauce and white pepper. Let the filling cool COMPLETELY before using it (if it is hot, it will moisten the dough and it will break).

Put a teaspoon of filling in the center of each wrapper. Wet half the edge with water using your finger.

Close the gyoza by making pleats only on one side of the dough (the one facing you), pressing against the flat back side to create the characteristic curved crescent shape.

Place the gyozas in the steamer on perforated baking paper (or a cabbage/lettuce leaf) so they don't stick. Steam over high heat for 6-8 minutes until the dough is translucent.

Serve immediately. Optional: accompany them with an extra bowl with soy sauce and a few drops of chili oil (not included in the nutritional calculation).
