About this recipe

Extremaduran migas, an emblem of Spanish pastoral cuisine, have their roots in the transhumant life of the shepherds of the plateau.

Originally created as a way to use up stale bread, this caloric and comforting dish was prepared at dawn before heading out to the fields.

In Extremadura, its version is accompanied by pancetta, chorizo, and often grapes or peppers, achieving a rustic balance between salty and sweet.

They are protagonists in popular festivals like 'matanzas' (pig slaughtering) and family gatherings in the cold months.

Furthermore, they have come to appear in costumbrist literary works, symbolizing the ingenious austerity of rural Spain.

Cut the day-old bread into small pieces and place it in a large bowl. Lightly moisten it with salted water and cover with a cloth for an hour to soften.
