About this recipe

Although today it is an emblem of Spanish cuisine, the potato omelette was born as a humble solution to hunger.

A Navarrese document from 1817 mentions this preparation for the first time as a resource to feed rural populations with scarce means.

During the Civil War and the post-war period, it became a pillar of subsistence: versatile, nutritious and easy to prepare even in precarious conditions.

Today, in addition to inspiring eternal debates about its preparation —with or without onion?—, it represents a living piece of the collective gastronomic imaginary, perfect both hot and cold, as a 'pincho' or in a sandwich.

Peel the potatoes, wash and dry them well. Cut them into thin slices or small irregular chunks ('chasqueadas') so they release starch better.

Chop the onion into brunoise (very small cubes) or fine julienne, depending on whether you prefer to notice its texture or not.

In a frying pan with cold oil, add the potatoes and onion. Turn on the heat to medium-high. We want them to confit slowly rather than fry all at once.

When the potato is tender and starts to brown (approx. 15-20 min), remove everything with a skimmer and drain very well in a colander. Reserve the excess oil for other uses. Draining is key so it doesn't get oily!

In a large bowl, beat the eggs vigorously with a pinch of salt. Add the hot potato and onion mixture to the egg and let rest for 5 minutes so the potato hydrates.

Put a tablespoon of the reserved oil in the pan over medium heat. Pour in the mixture. Cook for 1-2 minutes moving the pan in circles.

Flip with the help of a flat plate and cook on the other side for 1-2 minutes more (if you like it juicy) or longer if you prefer it well done. Round the edges with the spatula.
