About this recipe

This recipe adapts the classic Greek 'Spanakopita' to the portable muffin format.

It is a perfect example of 'smart food': we replace refined flour with oats (complex carbohydrate) and increase protein using Greek yogurt in the dough.

Preheat the oven to 180ºC. Wash the spinach and sauté them in a pan (without oil or with a drop) just until they 'wilt' (lose volume). Drain them VERY well squeezing with a colander to remove all water and chop them.
