About this recipe

Mujaddara is an ancestral dish from the Middle East with roots in medieval Arab cuisine.

Its first documented mention appears in a cookery book from the 13th century called 'Kitab al-Tabikh', where it is described as a humble but essential food.

Traditionally consumed by the working classes during Ramadan or on days without meat, mujaddara has endured as a symbol of simplicity, nutrition, and flavor.

In Lebanon and Syria, every family has its own particular version, and its aroma spiced with cumin and cinnamon is synonymous with home.

Its vegetarian character has allowed its contemporary adaptation as a healthy dish with deep cultural heritage.

Peel and thinly slice the onions. Heat the olive oil in a large frying pan and fry the onions over medium-low heat until very golden and caramelized.
