There are few dishes as rooted in the collective childhood memory of Spain as 'macarrones con chorizo'.

This is not a subtle Italian pasta; this is a hearty, humble, and spectacular dish.

The key to this recipe, inherited from our grandmothers, lies in three non-negotiable pillars: a good base sofrito of onion and garlic, the use of fresh (or tender) chorizo that releases its paprika when sautéed to dye the sauce a vibrant orange, and crushed tomato slowly fried until it loses all acidity and concentrates its flavor.

Finally, the pasta is tossed directly in the pan, absorbing all the flavors, and can optionally be crowned with a thick layer of crispy melted cheese.

In a wide pan or casserole, heat the olive oil over medium-low heat. Add the chopped onion and garlic. Sauté patiently for about 10-15 minutes with a pinch of salt, until the onion is very tender, translucent, and the edges begin to caramelize slightly.

Remove the casing from the tender chorizo, cut it into half-moons or slices, and add it to the pan with the sofrito. Turn the heat up a bit and sauté for a few minutes. You will see the chorizo begin to sweat its bright orange fat, infusing the onion with its unmistakable paprika aroma.

If desired (optional), remove the pan from the heat for a few seconds, add the teaspoon of smoked paprika, stir quickly so it doesn't burn, and immediately pour all the crushed tomato into the pan. Stir well.

Here is the secret: add the teaspoon of sugar to kill the acidity, a little salt, and plenty of dry oregano. Partially cover the pan and let the tomato cook and reduce over low heat for at least 20-30 minutes, stirring occasionally. The sauce should turn a deep, dark red and be stained with orange spots from the chorizo fat.

While the wonderful sauce is reducing (about 10 minutes before it finishes), bring plenty of salted water to a boil in a large pot. When it reaches a rolling boil, add the macaroni and cook them one minute less than the manufacturer's instructions on the package (it's better if they are not overcooked).

Drain the macaroni. Immediately dump them into the wide pan of boiling sauce. Toss energetically and affectionately for a minute so that every ridged macaroni catches the thick orange sauce. Serve them steaming hot, generously sprinkled with freshly grated melting cheese (or if you prefer, transfer to a baking dish, cover with cheese, and briefly broil in the oven for an irresistible crispy crust).
