  • Vegetable broth (homemade or organic)

  • Spring onion (scallion)

    10-12 leaves

  • Extra virgin olive oil

    10 ml

  • Salt and Black pepper

About this recipe

'Pisinós' (pea soup) was a staple of Ancient Greece, valued by philosophers and athletes.

This cold version recovers that classic tradition, lightened for the modern palate.

We use frozen peas because they are processed minutes after harvesting, maintaining more vitamins and sweetness than 'fresh' supermarket ones that have been traveling for days.

Greek yogurt and mint add the acidic and herbal contrast typical of the Aegean.

Chop the scallion (white part) and sauté it gently in the pot with the oil (10ml) without letting it color, just sweating (3-4 min).

You will need:

Add the peas DIRECTLY frozen and the broth. Turn up the heat, bring to a boil, and cook for only 4-5 minutes. We want to keep the bright green, not make a gray puree.

Remove from heat. Add the fresh mint. Blend at maximum power for 2 minutes. If looking for a haute cuisine texture, pass through a fine sieve.

Cool quickly (inverse bain-marie with ice ideally) and refrigerate for 1 hour.

Serve very cold. Top each plate with a quenelle of Greek yogurt, a drizzle of raw oil (optional), and freshly ground pepper.
