About this recipe

Cassava Cake is the unofficial national dessert of the Philippines, a legacy of the galleon trade that brought cassava (yuca) from Latin America.

It is not a fluffy sponge cake, but a dense, moist, and chewy cake (texture similar to Japanese mochi) bathed in a rich coconut cream and condensed milk.

This version includes the authentic Filipino touch: a salty grated cheese finish that contrasts beautifully with the sweetness of the milk.

If using fresh cassava, peel and grate finely (remove the fibrous central vein). If frozen, thaw and drain slightly.

You will need:

Preheat oven to 180°C. In a large bowl, mix the grated cassava, coconut milk, evaporated milk, 200g condensed milk, butter, and beaten eggs.

Pour the mixture into a greased pan (traditionally lined with banana leaf, but parchment paper works). Smooth the surface.

Bake for 45-50 minutes or until firm to the touch but not yet browned.

Prepare the topping: mix the remaining 100g condensed milk with a little extra coconut milk (if you have any left) or use it pure. Add the grated cheese to this mixture.
